Davies’ Thanksgiving Dirty Rice Casserole:
2 boxes of Uncle Ben’s Original Wild Rice (not fast cook or microwave rice)
1 lb of “Hot” country sausage
1 package sliced portobello mushrooms
1 vidalia onion
1 red pepper
1 can of cream of mushroom soup
1 box of “turkey” flavored Stovetop Stuffing (just trust me)
Cook down mushrooms, chopped red pepper (save a few raw pieces for a garnish), & chopped onion together (add salt, garlic pepper, & a dab of butter to taste) & set to the side
Brown sausage and drain with a spoon (not a strainer, remember “dirty” 😉) & set to the side
Cook both boxes of wild rice and pull it when it’s “almost” done (use a little less water than it tells you to)
Spray a casserole dish lightly with non-stick spray
Mix everything together in a big bowl and pour it into the casserole dish
Pour cream of mushroom soup over the top and let seep down into the rice
Cook your Stovetop stuffing and use a fork to spread it over top of your rice
Add chopped red pepper garnish & serve
You can also cover and keep it in a warm oven for hours until Thanksgiving is served! Enjoy!
